Cooking Preparation of the Recipe:


--------------------PENN CHERRY GROWERS-------------------------
1 1/2 c Green pepper, cut in strips
1 1/2 lb Red tart or dark sweet
-cherries, pitted
1 cn Water chestnuts
1 1/2 lb (To 3 lb) shrimp, cooked
3 1/2 c Rice, cooked

--------------------SWEET AND SOUR SAUCE-------------------------
2 1/4 c Cherry juice and water
1/3 c Cider vinegar
3 ts Ground ginger
3/4 ts Salt
3 tb Cornstarch
4 tb Sugar, using sweet cherries
-OR-
1 c (And 1 tbsp) using tart

Drain canned cherries. Add cherry juice and water and blend well
with rest of the sauce ingredients. Cook, stirring constantly, until
sauce thickens. Add green pepper and cook a few minutes, then add
water chestnuts, cherries, and cooked shrimp. Heat until warm. Cook
rice according to package direction. Serve over rice. Yields: nine
servings.
