1 bn Fresh broccoli 1 lb Mozzarella, diced
3 T Butter 2 ea Eggs
1 T Olive oil Preheat oven to 375 degrees
1/2 c Grated Parmesan cheese -F.
1 lb Ziti, cooked and drained
Cook broccoli in a small amount of boiling salted water. Drain, cool
and cut into small spears. Saute broccoli in butter and olive oil in
a medium size skillet until well saturated, stirring constantly.
Sprinkle the bottom of a 3-quart buttered casserole with Parmesan
cheese; cover with a layer of macaroni, then a layer of broccoli.
Top with a layer of mozzarella. Sprinkle with Parmesan cheese.
Continue alternating layers, finishing with a layer of macaroni.
Break eggs into a bowl, add 2 Tbsp. grated Parmesan cheese, and beat
well. Pour over macaroni, dot with butter, and bake, uncovered, for
20 minutes or until macaroni has a golden crust. Yield: Serves 4
