1 3/4 c All-purpose flour 3/4 c Sugar
1 1/2 ts Baking powder 1/3 c Vegetable oil
1/2 ts Salt 1 ea Egg -- lightly beaten
1/2 ts Ground nutmeg 3/4 c Milk
1/4 ts Ground cinnamon Jam
--------------------------TOPPING-------------------------------
1/4 c Butter or margarine -- 1/3 c Sugar
Melted 1 ts Ground cinnamon
In a large bowl, combine flour, baking powder, salt, nutmeg and
cinnamon. Combine sugar, oil, egg and milk; stir into dry ingredients
just until moistened. Fill greased or paper-lined muffin cups half
full; place l teaspoon jam on top. Cover jam with enough batter to
fill muffin cups three-fourths full. Bake at 350 deg. for 20-25 min.
or until muffins test done. Place melted butter in a small bowl;
combine sugar and cinnamon in another bowl. Immediately after
removing muffins from the oven, dip tops in butter, then in
cinnamon-sugar. Serve warm. Yield; 10 standard-size muffins.
