2 lb Waxy potatoes 2/3 c Milk
3 1/2 oz Shallots; finely chopped 1 1/2 ts Curry powder
3 1/2 oz Smoked streaky bacon; diced 3 oz Parmesan cheese; grated
Salt and pepper
Peel the potatoes and rinse under pleny of cold running water. Pat
dry. Grate.
Put the shallots and bacon in an oval Pyrex dish. Microwave,
uncovered, on High for 3 minutes.
Sprinkle the mixture with salt and pepper and add the potatoes.
Stir well and pour over the milk. Cover and microwave on high for 12
minutes. Leave to stand for 3 minutes.
Mix together the curry powder and Parmesan cheese and sprinkle
over the potato mixture. Microwave, uncovered, on High for 2
minutes. Serve in the same dish.
