2 lg Garlic cloves -- minced
2 ts Nuoc Mam sauce -- optional
2 tb Chopped fresh dill
Black pepper
Cornstarch
Vegetable oil -- for deep
Frying

----------------------NUOC CHAM SAUCE---------------------------
2 sm Garlic cloves -- crushed
1 sm Fresh red chili pepper --
Seeded and minced
1 oz Sugar
2 tb Fresh lime or lemon juice
1/4 c Cider vinegar or wine
Vinegar
1/4 c Nuoc Mam sauce
Maggi liquid seasoning
1 tb Water

---------------------PLANTAIN FRITTERS--------------------------
1 Egg
2 tb Superfine sugar
1 Whole ripe plantain --
Peeled and mashed
1/2 c All-purpose flour
1 ts Baking powder
Vegetable oil -- for frying

---------------------------BATTER--------------------------------
1 c All-purpose flour
pn Salt
pn Groung cinnamon
1 Egg -- beaten
2/3 c Milk
