1 cn Frozen coconut milk; thawed
-(32 oz)
1 c Mochiko
1 c Water
1/2 c Sugar
2 c Cooked yams; sliced in 1/2
-inch cubes
2 c Cooked taro, sliced in 1/2
-inch cubes
2 ea Firm ripe bananas; peeled
-and cut into 1/2 inch
-slices
Mix 1/2 c coconut milk with the mochiko to form a stiff dough. Shape
into 1/2 inch balls; set aside. In a large saucepan, combine
remaining coconut milk, water and sugar. Cook over medium heat for 10
minutes, sirring occasionally. Add yams and mochiko balls; cook,
stirring occasionally, for 10 more minutes. Add taro and cook for 15
more minutes or until desired thickness. Stir banana slices into
pudding before serving. Ginataan
