1/2 cup Hellmann's Dijonnaise mustard
1/3 cup apricot or peach jam
3 tablespoons sliced green onions
2 teaspoons soy sauce
1 tablespoon Mazola corn oil
4 - 6 boneless pork loin chops (about 1 pound)
In small bowl combine mustard, jam, green onions and soy sauce; set aside. In large skillet heat oil over medium-high heat; brown pork chops about 4 minutes on each side or until cooked through. Set aside and keep warm. Drain fat from skillet. Pour mustard mixture into skillet; cook and stir over low heat until slightly thickened. Return pork chops to skillet; turning to coat. Heat through.
