1 c Oat bran cereal 1/2 ts Cinnamon
1/2 c Whole wheat flour 1/4 ts Nutmeg
1/2 c All purpose flour ¬ tsp. salt
13 c Packed brown sugar 1 c Skim milk
2 t Grated lemon zest 1 T Lemon juice
2 t Baking powder 1/4 c Safflower oil
1/2 ts Baking soda 1 ea Egg
1. Heat the oven to 400F. Line a 12 count muffin tin with paper
baking cups.
2. In a large bowl, combine the cereal, flours, brown sugar, lemon
zest, baking powder, baking soda, cinnamon, nutmeg and salt.
3. In another bowl, place the milk, lemon juice, oil and egg, Whisk
until well blended. Add all at once to the dry ingredients. Stir only
until moistened;the batter should be slightly lumpy.
4. Spoon the batter evenly into the prepared pan. Bake 20-25 minutes,
or until the muffins are golden and springy to the outh. Remove the
muffins and cool on wire rack.
