2 1/2 lb Lean beef, cut into chunks 2 tb Flour
2 md Potatoes, cooked and peeled 2 Eggs, lightly beaten
3 sl White bread, soaked in 1/2 c Water
Water and squeezed dry 1/2 ts Poultry seasoning
1/2 Onion Salt, pepper
1/2 Clove garlic, minced
Combine the beef, potatoes, bread, onion and garlic. Put through a
grinder using fine grind. Toss lightly to mix. Do not knead. Add the
flour, eggs, water and seasonings. Mix well. Pack into a 9x5-inch
loaf pan. Cover loosely with wax paper. Place the loaf pan in a large
pan with 1/2-inch water in the bottom of the pan. Bake at 375 degrees
for 1 1/2 hours. Add more water to large pan if needed.
