1/3 c Mint leaves
1/4 c Olive oil
1/4 c Orange juice
1 tb Balsamic vinegar
1 Clove garlic -- minced
Salt and pepper
2 lb Tomatoes (4 to 6)
Wash, dry and finely chop the mint leaves. Combine the mint, olive
oil, orange juice, vinegar, garlic, salt, and pepper in a glass bowl.
Slice the tomatoes and place in the dressing, turning the slices to
coat evenly. Refrigerate for at least 1 hour. Reserve 4 slices
tomato for Grilled Buffalo Burgers.
