See below ingredients and instructions of the recipe
1 c Whole wheat flour 1/2 c Brown rice syrup
2/3 c Wheat bran 2 tb Crushed pineapple,
3 tb Oat bran Unsweetened
1/2 ts Baking powder 1/3 c Grated carrots
1/2 ts Baking soda 1 1/2 tb Canola oil
1 ts Cinnamon Jam or jelly, no sugar
1/2 c Lowfat buttermilk Added
1/2 c Egg Beaters
Preheat oven to 375F. Line 12 muffin cups with paper liners and set
aside. Combine dry ingredients in one bowl and wet, except jam in
another. Combine wet and dry ingredients. Spoon half of batter into
muffin cups. Spoon 1/4 teaspoon jam into each and top with remaining
batter. Bake until golden brown and a toothpick inserted in center
comes out clean, about 25 minutes.
Variation: For non-diabetics, add golden raisins, carob chips or diced
green apple.
