grated or shredded 2 ts Dried thyme
1 cn Stewed tomatoes low-sodium 1 lg Bay leaf
-- or reg w/juice; 14 1/2 1/4 ts Salt, or to taste; optional
-- oz can 1/4 ts Black pepper
3 c Cabbage, coarse ribs removed 1/2 lb Pork loin, trimmed of all fa
-- thinly sliced -- sliced
1 lg Onion; finely chopped 1 cn Tomato sauce, low-sodium or
2 Garlic cloves; minced -- regular; divided
1 tb Light brown sugar; packed

pot, combine potatoes, tomatoes, cabbage, onion, garlic, brown sugar,
vinegar, thyme, bay leaf, salt, if desired, and pepper. Stir to mix
well. Add pork slices on top of vegetables. Pour one-half of tomato
sauce over all. Reserve remaining tomato sauce in non-reactive
container in refrigerator.
Cover pork mixture, can cook on high setting 1 hour. Stir. Reduce
heat to low, and cook an additional 5 to 6 hours. Stir in remaining
tomato sauce and cook an additional 5 to 10 mins.
