Serves 252 pounds bacon, diced3 stalks celery, chopped8 large onions, chopped6 large carrots, chopped6 green bell peppers, chopped2 heads garlic, minced7 1/3 pounds chili sauce14 ounces clam juice3 1/4 cups water1 3/4 pounds chopped clams1 1/2 pounds tomato sauce1 pound diced tomatoes2 1/8 cups dry sherry6 cups fish stock1/4 cup Old Bay seasoning2 tablespoons oregano2 tablespoons basil2 tablespoons parsley3 teaspoons white pepper1 1/2 teaspoons cayenne pepper2 bay leaves1 1/2 teaspoons thyme3 pounds conch meat, beaten, chopped6 potatoes, diced
In a large stockpot sweat the bacon. Add celery, onion, carrot,green pepper and onion and saute until onion is translucent. Addremaining ingredients and bring to a boil. Reduce heat, cover,and simmer 30 minutes, or until conch meat is tender.
