6 Frankfurters 1/4 c Milk
1 tb Prepared Mustard 2 tb Cooking Oil -- OR
3/4 c Creamed Cottage Cheese 2 tb Melted Bacon Fat
3/4 c Pillsbury's Best All-Purpose 1 Egg
Flour* 1 tb Catsup
2 ts Sugar 1/2 c Cheese, Shredded -- OR
1 1/2 ts Baking Powder 4 sl Bacon, Cooked And Crumbled
1/2 ts Salt
* For use with Pillsbury's Best Self-Rising Flour, omit baking powder
and salt.
Split frankfurters lengthwise, but do not cut through. Spread cut
surface with mustard; top with a rounded tablespoonfuls of cottage
cheese; set aside.
Combine flour, sugar, baking powder and salt in small mixer bowl. Add
milk, oil and egg. Blend; then beat at medium speed 2 mins (or beat
300 strokes with a spoon). Spread on bottom of greased 9x5-inch pan.
Arrange frankfurters crosswise in pan, pressing to fit. Drizzle
catsup over cottage cheese. Sprinkle with cheese or bacon. Bake at
400 F for 30 to 35 mins until golden brown. Cool 10 mins; remove to
serving platter. Slice between frankfurters and serve.
Makes 4 to 6 servings.
