Cooking Preparation of the Recipe:
4 c Grated carrots
3 tb Fresh lemon juice
3 tb Vegetable oil
1/2 ts Ground coriander
1/4 ts Salt
2 ts Chopped fresh mint
1 tb Chopped fresh parsley
1 ts Sugar or maple syrup
Mix all ingredients together chill at least one hour before serving.
