3 tb Butter 1/2 c Chunky peanut butter
3 tb Minced onion 4 tb Water
1 tb Minced sedded jalapeno chile Salt
1 Tomato, peeled, seeded and Pepper
-coarsely chopped
Melt butter in pan. Add onion and saute 2 minutes. Add jalapeno and
tomato and cook until sauce becomes mushy. Add peanut butter and mix
well. Remove from heat and slowly add water to make pourable
consistency. Season to taste with salt and pepper.
Each serving contains about: 489 calories; 514 milligrams sodium; 66
milligrams cholesterol; 34 grams fat; 36 grams carbohydrates; 14 grams
protein; 1.60 grams fiber.
