Cooking Preparation of the Recipe:

2 tb Shortening 1/2 ts Salt
1 lb Ground beef 1/4 ts Pepper
3/4 c Minced onion 2/3 c Tomato sauce
1/2 c Celery, finely diced

---------------------------CRUST--------------------------------
1 1/2 c Flour, sifted 1/8 ts Marjoram leaves
2 ts Baking powder 1/4 ts Rubbed sage
1/2 ts Salt 1/3 c Tomato sauce *1

-------------------SPEEDY MUSHROOM SAUCE------------------------
1 c Milk 1 cn Cream of mushroom soup

--------------------FRESH MUSHROOM SAUCE-------------------------
5 tb Butter 1 ts Soy sauce
1/2 lb Fresh mushrooms 3/4 c Light cream
1 tb Flour

-------------------MUSHROOM CHEESE SAUCE------------------------
1/3 c Milk 1/2 c Sharp cheddar cheese, shred
1 cn Mushroom soup

*1 add enough water to make 1/2 c. liquid.

Melt 2 tbs shortening in skillet. Add ground beef, onion and celery.
Cook over medium heat until beef is browned. Add salt, pepper and
2/3 c. tomato sauce. Cook until thickened. Set aside while making
crust.

Sift together flour, baking powder and salt. Add herbs and mix well.
Cut in 3 Tbs shortening until mixture resembles coarse cornmeal. Add
tomato sauce to mixture and mix just until flour is moistened. Knead
dough gently about 4 times on lightly floured surface.. Roll to make
a 13 x 9 rectangle.

Spread beef mixture on dough, roll like jelly roll starting at 9 inch
edge. Place on ungreased baking sheet and bake in a 375 F. oven for
30 to 35 minutes. Cut in slices and serve with ketchup or one of the
3 sauces included in this recipe.

SPEEDY MUSHROOM SAUCE Stir milk (or dairy sour cream) into condensed
cream of mushroom soup and heat. Do not let sauce containing sour
cream come to a boil.

FRESH MUSHROOM SAUCE

Melt butter in skillet. Add fresh mushrooms, sliced, and sprinkle
with flour. Toss and cook over medium heat, stirring occasionally
until tender, 8-10 minutes. stir in soy sauce or season with salt.
Slowly stir in 3/4 cup light cream. Cook and stir till mixture
thickens.

MUSHROOM CHEESE SAUCE

Stir milk into condensed mushroom soup. Add shredded cheese, heat
and stir until cheese melts.
