2 1/2 c Tomato juice
12 oz Beer
1/3 c Onion - chopped
1/3 c Celery leaves - chopped
-(optional)
2 1/2 ts Sugar
1 ts Lemon juice
1/2 ts Salt
1 ea Bay leaf
2 ea Env unflavoured gelatin
1/4 c Water
1. Combine tomato juice (reserve 1/4 cup), beer, onion, celery leaves,
sugar, lemon juice, slat, and bay leaf in a sauce pan. Simmer,
uncovered, 10 minutes.
2. Meanwhile, sprinkle gelatin over cold water and reserved tomato
juice in a large bowl. Let stand to soften.
3. Strain hot tomato juice mixture into bowl; stir until gelatin is
completely disolved.
4. Pour into a lightly oiled 1 quart mold. Chill until firm. Unmold
onto crisp salad greens. Makes 8 servings.
