1/4 c Olive oil
1 lg Onion -- chopped
20 Milliliters
1 Stalk celery -- chopped
2 Carrot -- chopped
1 lb Lentils
2 1/2 qt Chicken broth
1 Bay leaf
1 tb Parsley
1 ts Cumin
1/4 ts Thyme
1/4 ts Pepper
pn Saffron
1 ts Salt
Juice of 1 lemon
Garlic -- minced
Heat the oil and saute the onion and garlic until just tender. Add the
celery and carrot, stir to coat with oil, cover and cook for 5
minutes. Add the lentils, broth, bay leaf, parsley, cumin, thyme,
pepper and saffron. Cover and cook over low heat for 1
