2 lb Broccoli 2 c Mozzarella or sharp cheddar
2 T Butter Cheese, shredded
1 Green onion, chopped Fresh ground pepper
(including green) *Optional*
1 Clove garlic, minced 4 Anchovies, finely chopped
1 1/2 T Flour (all purpose) 1/2 c Sliced black olives
1 c Chicken stock or broth
Cook broccoli in salted water until tender. As the broccoli cooks,
melt butter in saucepan and add the onion and garlic. Cook, stirring,
about 3 minutes. Do not brown! Sprinkle with the flour and add the
stock, stirring vigorously with a wire whisk. When the mixture is
thickened, simmer 5 min. Add the anchovies and olives (if desired),
pepper to taste, and cheese, and stir until the cheese melts. Serve
