2 ea Chopped shallots
1 3/4 lb Summer squash; skinned,
-seeded, and cubed
3 tb Butter
Salt pepper
3 tb Parmesan cheese; grated
Put the shallots in a casserole dish. Cover and microwave on high
for 3 minutes.
Add the squash and 1/4 cup water. Cover and microwave on high for 10
minutes.
Put the butter in a bowl and melt for 1 minute on high. Sprinkle
with salt and pepper and pour over the squash. Add the Parmesan and
stir well. Transfer to a serving dish and serve. _The Ultimate
