Cooking Preparation of the Recipe:

2 (16 oz.) pkgs. frozen corn 1 md -size red onion (chopped)
-kernels 1/3 c Olive oil
8 oz Monterey Jack cheese (cut 2 tb White wine vinegar
-in sm. cubes) 1 tb Ground cumin
1 lg Red bell pepper (seeded and 1 ts Salt
-chopped) 1/2 ts Black pepper
1 lg Green bell pepper (seeded 1/8 ts Cayenne pepper
-and chopped)

Cook corn as directed on package, drain and rinse in cold water. Add
cubed cheese, chopped peppers and onion. In another bowl, mix well
olive oil, vinegar, cumin, salt, black pepper and cayenne pepper.
Pour dressing over corn mixture, blend gently and refrigerate 3 hours
