3 T Butter or oil ds Of pepper
2 ea Cloves garlic 9 oz Tofu
1 c Bulgur wheat 2 t Soy sauce
1 sm Onion, chopped 1 ea Tomato, chopped
2 c Vegetable stock Parmesan cheese
1/4 t Oregano ds Of parsley
Melt butter in saucepan. Add bulgur, onion, and garlic and saute for
4 to 5 minutes. Remove garlic buds. Add stock, oregano and pepper,
cover pan, and bring to a boil. Reduce heat and simmer for 15
minutes, or until all liquid is absorbed. Combine tofu and soy sauce
in a small bowl and mash together, then stir into the cooked grain.
Serve hot seasoned with parmesan cheese and parsley stirred in. AR/95
