3 lb Chicken, in quarters/pieces
1 tb Mustard,prepared
1/2 ts Salt
1 c Bread crumbs, freshly made
1 tb Butter, softened
1 tb Vinegar
1/4 ts Cayenne, or to taste
Prehead oven to 375f. Wipe the chicken with a paper towel. Mix the=
butter, mustard, vinegar, salt and cayenne, and rub the mixture all
over the skin side of the chicken.=14Place the chicken, skin side up,
in a shallow= roasting pan. Sprinkle evenly with th crumbs and bake
for about 40 minuts, or= until meat thermometer rgisters 170f in the
