Main Ingredients:
2 eggs, beaten1 cup buttermilk1 teaspoon salt1/2 teaspoon baking soda2 teaspoons baking powder1-1/2 cups flour4 Tablespoons cornmeal1 medium eggplant, peeled and cubedoil
Cooking Preparation of the Recipe:
Combine eggs, buttermilk, and dry ingredients, mixing well. Foldeggplant cubes into batter. Drop by large spoonfuls into hot deepoil in skillet. Fry until lightly browned on both sides. Drainwell on paper towels, serve immediately.
