2 c Diced mango (avoid fibrous 1/4 c Diced red onions
-parts) 2 tb Grated ginger
1/4 c Chinese preserved black 2 Red jalapeno peppers,
-beans, rinsed -sliced in thin circles
1/4 c Green onions, thinly sliced 1 sm Sweet red pepper, diced
-on the bias
----------------1/2 CUP MIXED, CHOPPED FRESH---------------------
Oregano 1/4 c Rice wine vinegar
Zest and juice of one lime 1 c Light olive oil
Zest and juice of one orange 1 tb Toasted cumin seed
Mix together all ingredients; adjust seasoning with salt and citrus.
Let sit for a few hours before serving.
