1 3-Lb Chicken, cut up for 1 Fresh Apple, Unpeeled,
-frying -sliced OR a handful of
Salt And Pepper -dried apples
3/4 c Apple Cider Or Juice Handful Of Seedless Raisins
1/2 c Orange Juice Handful Of Dried Apricots
1/4 c Lemon Juice Handful Of Pitted Prunes
1 Onion -- chopped 2 tb Honey
1/2 c Vegetable Oil
Salt and pepper the chicken pieces, then marinate chicken in fruit
juices and onion for 1 hour or so (reserve marinade). Preheat oven to
350 F. Brown both sides of all chicken pieces in oil. Place chicken
in a covered casserole and cover with marinating juices plus the
remaining ingredients. Bake for 45 mins, basting occasionally with
marinade and pan juices.
Yield: 4 to 5 servings.
