2 1/2 c Mashed cooked pumpkin ds Salt
3 c Water (approximately) 1 c Milk or light cream
1 tb Chopped onion 1 tb Curry powder or to taste
1 tb Shortening ds Fresh or dried mint
Saute onion until transparent.
Combine pumpkin and water, stir to form thin puree. Add onion. Boil
for three minutes. Add milk or cream, salt to taste and curry
powder. Heat through, stirring constantly.
Sprinkle mint over the top before serving if desired.
