4 c Iceberg lettuce -- shredded 1 lb Pea pods -- fresh halved
Or 5 cups 4 c Cooked chicken -- cubed
1 md Cucumber -- thinly sliced 2 c Miracle Whip® light
1 c Bean sprouts 1 tb Sugar
1 cn Waterchestnuts, canned -- 2 ts Curry powder
Drained 1/2 ts Ground ginger
1/2 c Green onions -- thinly Cherry tomatoes fresh
Sliced Parsley sprigs -- optional
Place lettuce in the bottom of a 4 qt. glass salad bowl. Layer with
cucumber, bean sprouts, water chestnut, onion, pea pods and chicken.
In a small bowl, combine mayonnaise, sugar, curry and ginger. Spread
over top of salad. Garnish with cherry tomatoes and parsley if
desired. Cover and chill several hours or overnight. Yield: 8-10
servings.
