1 c. soaked soybeans
3/4 c. water
1/8 tsp. salt
1?2 tbsp. sweetener (honey or dates)
1 tsp. vanilla (opt.)
BRING soaked soybeans to a BOIL in 2 cups water. COOK about 5 minutes. DRAIN.
BLEND cooked soybeans with 2 cups water until completely smooth. ADD remaining
ingredients and additional 1 1/2?2 cups water. CHILL. If making to serve immediately,
use ice cubes instead of the last cup of water. ADJUST seasonings to suit your taste.
Soybeans may be soaked and frozen.
