2 3/4 c All-purpose flour 2 c Sweet potatoes -- mashed
4 ts Baking powder 3/4 c Sugar
1 1/4 ts Salt 1/2 c Butter or margarine --
1/2 ts Ground cinnamon Melted
1/2 ts Ground nutmeg 1 ts Vanilla extract
3/4 c Nuts -- chopped
In a large mixing bowl, combine flour, baking powder, salt, cinnamon,
nutmeg and nuts. In another bowl, combine sweet potatoes, sugar,
butter and vanilla; add to flour mixture and mix well. Turn onto a
lightly floured surface; knead slightly. Roll dough to 1/2-in.
thickness. Cut with a 2-1/2-in. biscuit cutter and place on lightly
greased baking sheets. Bake at 450 deg. for 12 minutes or until
golden brown. Yield: 1-1/2 to 2 dozen
