--------------------------DRESSING-------------------------------
1/2 c Canola oil 2 tb Lemon juice
2 tb Cider vinegar 2 tb Soy sauce
---------------------SALAD INGREDIENTS--------------------------
2 c Cooked lentils 10 oz Canned Mandarin oranges
2 c Cooked rice 2 tb Green onions; chopped
10 oz Mushrooms; canned 1/2 c Almonds; slivered
1 c Celery; chopped
In a container with a tight fitting lid combine oil, vinegar, lemon
juice and soy sauce. Shake well.
Combine lentils, rice and mushrooms. Pour dressing over the mixture,
cover and chill at least one hour. Just before serving, add celery,
oranges, onion and almonds.
