3/4 c Bread crumbs, dry 2 lb Pork, lean, ground
2 ea Eggs. slightly beaten 16 oz Sauerkraut *1
1/3 c Milk 1/4 c Onion, chopped
1 1/2 ts Salt 3 tb Pimento, chopped
1/4 ts Pepper 1 tb Sugar
1 ts Thyme leaves 5 sl Bacon
1 tb Worchestershire sauce
*1 sauerkraut, drained and finely cut with scissors
Combine bread crumbs, eggs, milk, salt, pepper, thyme and
Worchestershire sauce. Mix in pork.
On waxed paper pat mixture into 12 x 9 inch rectangle.
Combine Kraut, onion, Pimento and sugar, spread evenly over meat.
Roll up from narrow end. Place loaf in greased, shallow baking dish.
Lay bacon over top.
Bake in 375 F. oven 70 minutes.
