1 tb Brown Sugar 1/4 c Milk
1 c All-purpose Flour 1 c Seasoned Dry Bread Crumbs
4 To 6 Green Tomatoes, medium, 3 tb Butter or Margarine
-sliced 1/2' thick 1 tb Cooking Oil
1 Egg, beaten
Combine sugar and flour; place on a shallow plate. Dip both sides of
each tomato slice into the mixture. Combine the egg and the milk. Dip
each tomato slice, then dip into bread crumbs. In a skillet, heat
butter and oil over medium-high. Fry tomatoes until brown, but firm
enough to hold their shapes.
Yield: about 6 servings.
