Cooking Preparation of the Recipe:
2 c Diced tomatoes -
-(about 3 large)
1/2 c Fresh corn kernels
1/2 c Diced English hothouse
-cucumber or pickling
-cucumber
1/2 c Sliced green onions
1/4 c Diced green bell pepper
1/4 c Plus 2 tbsp olive oil
1/4 c Chopped fresh cilantro
3 tb Fresh lime juice
2 lg Garlic cloves, minced
1 Jalapeno chile, minced
1/2 ts Ground cumin
Combine all ingredients in large bowl. Season to taste with salt and
pepper.
