--------------------------FILLING-------------------------------
1/2 c Brown Sugar, Firmly Packed -Thawed (1 Package)
1 T Corn Starch 1 T Freshly Squeezed Lemon Juice
20 ea Ozs Frozen Peach Slices,

--------------------------TOPPING-------------------------------
1 c Unbleached Flour 1/4 c Butter Or Regular Margarine
1/2 c Granulated Sugar 1/2 c Milk
1 1/2 t Baking Powder 1/4 t Freshly Grated Nutmeg
1/2 t Salt Heavy Cream (Optional)

----------------------PREPARE FILLING---------------------------

In a 2-quart saucepan, combine the brown sugar, cornstarch and 1/2
cup of water. Bring to a boil over medium heat, stirring constantly.
Remove from the heat and stir in the peaches and lemon juice. Spoon
the mixture into a 1 1/2 quart round baking dish. Heat the oven to
350 degrees F. PREPARE TOPPING: In a medium-size bowl, combine the
flour, sugar, baking powder, and salt then cut in the butter until
the mixture resembles coarse crumbs; stir in the milk until
everything is well blended. Spread the dough over the peach mixture
in the baking dish and sprinkle with the nutmeg. Bake for 30 to 35
minutes or until golden. Serve with heavy cream, if desired.
