2 tb Olive oil 1/2 md Zucchini, thinly sliced
1 lb Shrimp, peeled and deveined 1 Clove garlic, minced
3 Scallions, chopped Juice of 1/2 a lemon
1 Stalk celery sliced 2 tb Shredded coconut
Salt and pepper to taste
1) Heat 2 tb oil in skillet. Add shrimp and cook over high heat for
3- 4 minutes.
2) Add celery and scallions to skillet. Season with salt and pepper;
stir well and cook 2-3 minutes.
3) Add zucchini to shrimp mixture. add a little more oil if mixture
is too dry. stir in garlic; saute for 2-3 minutes.
4) Sprinkle mixture with lemon juice and coconut; mix well. Serve hot
with white rice.
