1 1/2 lb Sweet potatoes 1 ts Vanilla extract
2 tb Margarine; melted 8 lg Marshmallows
1/3 c Light brown sugar; firmly pa 2 c Cornflakes; crushed
1/2 ts Cinnamon; ground

sweet potatoes; cook in boiling water 45 mins to 1 hour, or until
tender. Drain well and let stand until cool enough to handle. Peel
and mash; stir in next 4 ingredients. Cover and refrigerate until
chilled. Form croquettes, shaping scant 1/3 cup sweet potato mixture
around each marshmallow. Roll in cornflakes, pressing lightly to form
2-inch thick patties. Deep-fry in batches in hot oil (375°F) until
browned; drain. YIELD: 8
NOTES : So good with ham or pork chops.
