1/2 lb Italian rice Salt and pepper
3 T Olive oil 2 oz Grated Parmesan cheese
2 pt Beef stock
-------------------------DIRECTIONS------------------------------
2 oz Butter pn Of saffron
1 ea Onion finely chopped Extra butter
Heat the butter and oil in a saucepan, slowly fry the onion without
letting it brown. Add the rice, and stir over heat for a few
minutes. Add the stock, then cover the pan and let the contents boil
for 10 minutes. Add a pinch of saffron, salt and peper, stir and boil
for a further 5-6 minutes. Remove from heat, stir in some butter and
the cheese, and serve. Makes 6 helpings.
