1 tb Chipotle chiles
-finely chopped
-(canned or bottled)
1 Anaheim or New Mexico
-green chile
-trimmed, seeded, sliced
2 Garlic clove(s), minced
1 tb Ginger, minced or grated
1 tb Lemon or lime juice
1 1/2 lb Shrimp
Preheat oven to 400F. In a large bowl, combine the chile pepper,
garlic, ginger and lemon juice. Stir to mix, then add the shrimp and
stir until the shrimp are evenly coated. Let sit for 5 minutes.
Pour the shrimp mixture into a shallow baking dish and roast the
shrimp until they are just opaque through, 8-12 minutes.
Spoon onto individual plates, with rice alongside, if desired.
