Cooking Preparation of the Recipe:

1/2 c Vegetable oil 1 1/2 ts Baking soda
1/4 c Sugar 1 ts Ground cinnamon
1/4 c Packed brown sugar 1 ts Ground ginger
1 c Molasses 1/2 ts Salt
1 ea Egg 1 c Water
3 c All-purpose flour

In a mixing bowl, beat the oil and sugars. Beat in molasses and egg.
Combine the flour, baking soda, cinnamon, ginger and salt; stir into
molasses mixture alternately with water. Fill greased or paper-lined
muffin cups two-thirds full. Bake at 350 deg. for 20 to 25 min. or
until muffins test done. Cool in pan for 10 minutes before removing
to a wire rack. Yield: about 20 standard size muffins.
