3 c Diced cold, cooked chicken -washed and dried
1/2 c Mayonnaise 2 Hard-cooked eggs, shelled
1/3 c Sour cream -and cut into wedges
2 To 3 tsps. curry powder 6 Stuffed olives, sliced
-Salt, pepper to taste 2 tb Capers, drained
-Crisp lettuce leaves, 3 tb Finely chopped dill pickles
This curry-flavored chicken salad, called honssallad, is a Swedish
smorgasbord specialty, but it may also be served as a luncheon
entree.
Combine chicken with mayonnaise, sour cream, and curry powder. Season
with salt
and pepper and mix well. Refrigerate 1 hour or longer to blend
flavors. When
ready to serve, arrange lettuce leaves on a platter and spoon salad
over them. Decorate with remaining ingredients.
SERVES 4 TO 6.
