2 tb Vegetable oil
2 Cloves garlic,crushed
1 ts Salt
1/2 c Dry red wine
2 pk Frozen haddock fillets(16oz)
1/2 c Finely chopped onion
1/4 c Snipped parsley
4 dr Red pepper sauce
1 cn Tomato paste(6oz)
Heat oven to 350'. Heat oil in 8-inch skillet. Cook and stir onion and
garlic in hot oil until onion is tender, about 4 minutes; drain off
oil. Stir in parsley, salt and pepper sauce. Mix wine and tomato
paste; stir into onion mixture.
Place haddock cubes in ungreased baking dish, 12x8x2 inches; spoon
sauce over haddock, spreading evenly. Cover and bake until haddock
flakes easily, about 30 minutes.
