1 ea Hard-boiled egg -- chopped 1/4 c Sweet pickles -- chopped
1 cn Tuna in water -- 3 oz 3 tb Light mayonnaise
Drained and flakes 2 ts Mustard -- prepared
1/4 c Chopped celery
Combine all of the ingredients in a small bowl and mix well. Spoon
into tomatoes use as sandwich filling or serve with crackers. Yield:
3 serving. (1 1/2 cups) Diabetic Exchanges: one serving equal 1 1/2
meat, 1 vegetable: also 129 calories, 396 mg sodium, 86 gm
cholesterol, 7 gm carbohydrate, 11 gm protein, 6 gm fat.
