4 oz. bacon, diced
1 green bell pepper, seeded, diced
1 onion, pared, diced
1 garlic clove, pared, minced
1 celery rib, diced
2 cups tomatoes, peeled, seeded, diced
1 cup orange juice
2 tbsp. curry powder
1 tbsp. thyme, minced
2 oz. dried currants
2 oz. parsley, minced
Brown bacon. Add peppers, onions, garlic and celery; stir to combine. Add tomatoes, orange juice, currants and seasonings; cook until vegetables are tender. Adjust seasoning.
