See below ingredients and instructions of the recipe
1 1/2 lb Flounder or sole fillets -leaves
1 c Diced vine-ripe tomatoes or 1 Clove garlic, minced
-oz. can stewed tomatoes 1 ts Ground cumin
6 tb Shredded Monterey Jack -Pinch of fresh or dried
-cheese -oregano
4 tb Minced onion -Lemon pepper to taste
1 Jalapeno pepper, chopped 1 c Plain tomato sauce
2 tb Chopped fresh cilantro
Flatten fish fillets. Combine remaining ingredients, except tomato
sauce, and put some of mixture on top of each fillet. Roll fillets,
then arrange seam side down in non-stick baking pan sprayed with
cooking spray. Pour on tomato sauce (and sprinkle with additional
herbs, if desired). Bake uncovered in preheated 350 degree oven for
20 to 25 minutes. Makes 6 servings, 145 calories each.
