Main Ingredients:
2 sweet red peppers, seeded and chopped fine4 medium ripe tomatoes, chopped3/4 cup sliced cucumber2 small onions, sliced thin1/2 cup black olives, pitted and halved6 anchovy fillets, chopped2 hard boiled eggs, quartered1 t chopped fresh basil or cilantro3 T. olive oil1 T. vinegarsalt and pepper to taste
Cooking Preparation of the Recipe:
Place all ingredients into a large salad bowl and toss gently.May be served with pita bread.A wonderful salad loaded with flavor
