Cooking Preparation of the Recipe:

1 lb Spinach -- washed and
Chopped
2 lg Apples -- cored diced
1/2 c Red onion -- thinly sliced
1/2 c Walnuts -- chopped
Toasted
2 tb Lemon juice
1 tb Dijon mustard
1/2 ts Sugar
2/3 c Olive oil

In a large salad bowl combine the spinach, apples, onions and the
walnuts. In a small bowl, combine the lemon juice, mustard, sugar and
add the oil in a stream, whisking, and whisk the dressing until it is
combined well. Whisk in salt and pepper to taste and toss with the
salad.
