1/2 c Mayonnaise or salad dressing 2 ea 10-oz packages frozen
2 ts To 3 tspn curry powder -asparagus spears; thawed
1 1/2 ts Lemon juice 2 tb Capers
1 lb Fresh asparagus spears -OR-
Combine first 3 ingredients; cover and chill.
Snap off tough ends of asparagus; remove scales with a knife or
vegetable peeler, if desired. Cook asparagus, covered, in a small
amount of boiling water 6 to 8 minutes or until crisp-tender; drain.
Arrange asparagus spears on a serving platter; top with curry
sauce, and sprinkle with capers. Yield: 4 servings.
