Cooking Preparation of the Recipe:

2 tb Unflavored gelatin
1/2 c Sugar
1/2 ts Salt
2 c Shoestring beets
2 c Cold water
1/2 c Vinegar
2 ts Prepared horseradish
2 c Finely chopped cabbage

In a saucepan combine gelatin, sugar, and salt. Drain beets,
reserving liquid (1 cup). Blend beet liquid into gelatin mixture;
stir over medium heat till gelatin is dissolved. Remove from heat;
add water, vinegar and horseradish. Chill till partially set; fold
in drained beets and cabbage. Turn into 5 1/2 cup ring mold; chill
till firm. Unmold onto salad greens or cabbage leaves. Serve with
